Even if the motor could keep up with what your doing I seriously doubt the light sensors/arduino could react fast enough to keep you spooling for very long... and as Ian said getting your loop setup is hard enough for us slow pokes for you its going to be very interesting.
I think if I were in your shoes I would by a winder set my extruder up to extrude onto floor (calibrate correct height to hit your diameters). Then after I've extruded a couple pounds worth use the winder on manual and wide open to wind it. You will probably want to include a filament wiper or similar into the winding process somewhere.
Seems like it would be a lot less hassle and if your extruding at that speed I can only assume your planning on making large amounts at a time.
