Almost like the thermistor is loose or something similar...
My temperature was fluctuating just like that. When the upper limit was reached it shut down on high limit. If a low limit was reached it shut down the extruder. I changed the thermistor and it did not help. When I re calibrated the PID the problem went away. There are simple to follow instructions on the solidoodle WIKI. Good luck and keep up in the loop.

Yes it seems to happen every couple hours of printing. If the machine is just sitting there with the extruder heated but no filament and no movement it does not seem to do it. I may try retaping the thermistor to the extruder, however I'm afraid that the flexible insulation that came stock will not survive the process. Anyone know what I can do use as an alternative or where to find the original stuff?

I have gone through the PID tuning steps and 99% of the time the temperature is super stable and accurate now, it just sometimes freaks out.
you can find kapton tape on ebay or amazon.
I've got kapton tape, I'm referring to the black stretch insulator that is slipped on over the kapton tape. Or is that not that important?
I'm not really sure how to describe it and can't take a picture right now but its black on the outside, stretch and appears to be white fabric on the inside. I assume its to retain heat.

So I finally gave up on finding the issue and decided to replace the hotend wiring and all. When I started unplugging the hotend from the board I noticed the power plug for the extruder looked like the wires inside the connector were coming loose. replaced the connector and my issue seems to be solved
