Does anyone make subtractive 3D printers for hobbyists? It seems like it has fun potential. More potential materials that are less toxic, maybe even wood, and no layer cooling issues.

you mean i cnc milling machine. Tons of places do. Try Mazak or DMG Mori for top of the line machines

All you are talking about is a machine that was converted to a router or is already built to serve that purpose. It is no longer a printer and should not be qualified as such. Also they can only remove material from one axis at a time so it requires you to remove and reposition the material to work on a different side and that too requires you to position it exactly so that the work on one side will line up with the other.
To me it would be a better and more precise deal to buy an actual multi-axis milling machine.
Seems to me you want the most out of the least and you just can get it. That's not how things work.
A multi-axis, computer controlled milling machine will take up half of a garage, weight about 5000 lbs, and cost about$ 250K, or maybe $8K0-120K used.
I don't know about you, but that's slightly out of my league.

True but most of your converted printers can only do wood or thin aluminum and results in nothing more than a sign maker most of the time.
