Those motors have far more torque than is needed, most Pololu style stepper drivers can't do 2 amps anyway. 0.6 amps or so would be plenty on that setup.
Also this:
The motors have twice the step accuracy of a typical motor.
is pretty silly, these are 1.8deg motors, which is standard.
