It might not hurt to verify the thermistor as well with a K-type thermocouple that plugs into a multimeter.  You can tape the thermocouple on the other side of the nozzle, or even slip it in next to the thermistor.   When you extrude into air, can you see tooth marks from the gear?  That is usually an indication that you are within 5C or so of being too cool to extrude.  If the actual extruder temp is quite a bit lower than it is reporting, that would cause more difficulty with extruding.

I mostly use 95 for the bed, with hairspray I can usually start printing at 65 or so and still be good.  Since I model most of my own stuff, if I know it's going to be a tricky part I put a custom brim or add some geometry that can be trimmed to help me stick.
