1: press either the up arrow or down arrow. This will make the decimal point start to blink.
2: press the left pointing arrow button to select which digit is to be changed. EX: 000.0 00.00 0.000
3: press either the up or down arrows again while in this decimal flash mode to raise or lower the digit selected.
4: press SET, it will show a number like (A100).
5: press SET again until you see the green number read the temperature you desire. The decimal will no longer blink and the red temperature will gradually approach the green value.

Sounds like this project is above your technical skill. The instructions are more than adequate to get the machine running, I have built several. There is no "Set X & Y to these values" and you're done. You have to experiment a little to figure the best settings for your own particular setup. IF you would like some personal help send me a PM. My fees are reasonable.
