That looks a lot like the couplings we offer. I field tested our direct drive kit for a month before we made it all available, so I think the problem may indeed be your mount. I'm unsure what your design is, though.

If it is, a new mount is far cheaper to make than buying a new coupling. But cutting the motor shaft back is excessive.

No trimming is needed. I have done this on all of my printers, 2 of which have our designed mount installed with the coupling we offer. The worst I have noticed with jaw couplings is separation, but this is easily avoidable with either several M6 washers or even a printed spacer, which is my preferred solution.
If you had to cut the motor shaft, I would like to ask where you bought the coupling from. Do you have a link?

Did you trim the 5mm motor shaft on the Y axis direct drive kits? I have done this mod on 2 printers and found that it requires trimming a little bit on the shaft for the coupling to fit correctly. This might not be necessary depending on your arrangement. I don't need one, just asking so the info is out there.

The 12V 30A power supply I bought from PrintIt works great. I'm getting ready to spruce it up with a switch/outlet/fuse module, and a 3D-printed end cap.

I was going to put a digital voltage display from Adafruit on the power supply as well, but ultimately wired it directly to the Printrboard.

I bought a Hobb Goblin from Printit too, but haven't installed it yet.
