First off could you delete the double post please?
You should check that all the rivets are tight.
If you tighten the 3 leveling screws and squish the springs more you can remove some of the movement. Then adjust your z-height screw to compensate for (the now) lower bed height.
I have 2 SD3's one with the aluminum platform and one with the older wood platform. I would agree that the wood one seems more stable. Adjusting as stated above and checking for loose rivets should resolve your issue with the bed.
As far as "shredded wheat" goes a picture would help. I would suspect a partial clog in your hot end or filament that has absorbed too much moisture. Look to see if the drive gear is stripping the filament. Clean the drive gear and adjust the tension arm.

Last two print attempts came out like shredded wheat on the first layer and ultimately got knocked loose. The SD support suggested it was my settings but I have changed nothing since my last successful print. I don't currently have new photos of the first layer but the object is a simple flat Christmas ornament. For something producing what appears like shredded wheat with irregular space between lines could it be as simple as the nozzle not being quite close enough?

Also I sent my first SD2 back for a tuneup because of serious zbanding and the new machine has the metal z carriage. Has anyone had issue with it? I find it bobbles around on the three tall screws and springs and worry it also helps to mess up prints. The previous printer seemed more stable in that regard.
